Lemon Peel is set aside and mascerasted and distilled to extract the oilds and aroma.
The same lemons are juiced and the distilled peel is used as a base. 
Olives are distilled in water with the peel to gibe the olive aromatic and taste.
A touch of Seawater is added to enhance the lemom and olive.
 
The liquid is chilled to 2 degrees C, before it is bottled. This optim ises the crabonation (longer fizz).
