Production Process:

Banhez Ensemble Mezcal is crafted using traditional methods that have been passed down through generations:

Harvesting: Mature agave Espadín and Barril are hand-harvested by skilled jimadores.

Roasting: The agave hearts (piñas) are roasted in an underground pit oven, imparting a signature smoky flavor.

Crushing: The roasted agave is crushed using a traditional tahona (stone wheel) to extract the juices.

Fermentation: The agave juice ferments naturally in open-air wooden vats, utilizing wild yeasts.

Distillation: The fermented mash is double-distilled in small copper pot stills, resulting in a pure and flavorful mezcal.

 

Distillery Information:

Banhez Mezcal is produced by a cooperative of mezcaleros (mezcal producers) from the village of San Miguel Ejutla in Oaxaca, Mexico. The cooperative is dedicated to preserving the traditional methods of mezcal production while supporting the local community.
